Soy Sauce and Soy Sauce Powder

I’ve been seeing soy sauce powder listed on more and more product ingredient lists.

Soy sauce powder is simply soy sauce in a dried powdered form. For people with celiac disease, it has the same problem as soy sauce – it often contains wheat and barley protein and as a result is not acceptable on a gluten free diet. Almost all soy sauce powders contain wheat and barley, and when the ingredients are not listed out, you have to assume that it does contain wheat and barley.

Soy sauce is made by fermenting soy beans with two molds (Aspergillis oryzae and Aspergillis soyae) along with roasted grains, water and salt. The grains are usually barley or wheat. Some Japanese soy sauces are made without wheat.

Some less expensive soy sauce brands are made from hydrolyzed soy protein and colored with caramel color to make it the right color. These sauces do not contain wheat or barley.

For once, people with celiac disease do better with spending less money rather then more!
