This weekend, I ate in a restaurant with a group of people. Most of us had celiac disease. The chef came out to talk to us (we warned him when we made the reservation). He had a list of all the menu options with the top allergen’s listed.
What I enjoyed about him is that when someone asked about the Prime Rib, he said that it was not on the list because of the gravy/sauce. “But there’s no reason why I can’t go back and make something for you guys, prime rib tastes better with gravy”. He went back into the kitchen and the prime rib was delivered with a delicious and safe GF gravy.
We were customers with a special need that he could fill, and he was happy to be able to do it.
I know a lot of people who are reluctant to be “a difficult customer” and so they don’t even ask. Maybe we are doing the chefs a disservice because we are not giving them the chance to show us what they can do.
